Every Christmas, my mom made this and packed it into gallon-sized bags like it was gold. It was a little overcooked. The spices were whatever was in the cabinet, probably older than they should have been. And we loved it. Every last piece of it.

I’ve tried to “fix” it over the years. Better spices. Better timing. More control. And every time, it missed. Not worse. Just not right.

The trick, it turns out, is not improving it. The trick is making it the way we remember it.

The method

  1. 01

    Preheat oven to 250°F.

  2. 02

Melt butter and stir in seasoning salt, garlic powder, onion powder, and Worcestershire sauce.

  3. 03

Combine cereals, nuts, and pretzels in a large bowl.

  4. 04

Pour butter mixture over and toss well to coat.

  5. 05

    Spread onto baking sheets.

  6. 06

Bake for about 1 hour, stirring every 15–20 minutes.

  7. 07

And then… perhaps a little longer, if you like the extra-toasty version I remember. Check often. Toasty, not scorched.

  8. 08

Let the mix cool completely before packing it into bags or containers.

Notes

  • This is one of the few recipes where “perfect” isn’t the goal.
  • Slightly overcooked is part of what makes it what it is.
  • Better spices won’t necessarily make it better. They’ll just make it different.
  • If you want a technically better Chex Mix, there are plenty of versions out there. This isn’t that one.

Next Time

Resist the urge to improve it. Or don’t. Just know that if you change it too much, it stops being this version and becomes something else entirely.
