I had a bag of cooked Thanksgiving stuffing in the freezer. By August, a rolled pork loin seemed like a good use for it. The stuffing had been good at Thanksgiving. That was why I had saved it.

Months later, I could have reheated it as a side dish and tried to recreate Thanksgiving. Instead, I used it as an ingredient in something new.

I opened a section of pork loin into a flat sheet, spread the stuffing across it, then rolled and tied the meat around the filling. As it cooked, it absorbed the pork juices and came out with more flavor than it had the first time.

“Leftovers do not always need to return as leftovers. Sometimes they become ingredients.”

Freezing food is not useful because it preserves a moment forever. It is useful because it keeps a good ingredient available until another idea needs it.

Make it yours

Use the filling you already like.

Your stuffing does not need to taste like mine. It needs to be fully cooked, moist enough to hold together, and dry enough that the roast can still be rolled. Learn that balance and use the flavors that belong at your table.
